End of Summer Tomato Soup with Skillet Bread Rolls

The early autumn frost signalled that summer has drawn to a close. Yet the garden still brims with tomatoes in various stages of ripeness, though many are dropping from their stems due to the turn in weather. Now picking, or retrieving them from the ground begins in earnest, from the buckets of tomatoes, the ripest ones became an end of summer tomato soup, served with skillet bread rolls. This simple meal is a celebration of summer.

Unlike many classic soup and sauce recipes, no mirepoix or stock is used. Instead of a deep hearty flavour, the taste of ripe tomatoes is front and centre stage, a bowl bright and fresh of tomato goodness.

End of Summer Tomato Soup

If you don’t have access to a garden you can still make this soup. And you can still save money if you buy at the right time. Towards the end of summer, look for the tastiest-looking overripe or blemished tomatoes at your local store. They are often discounted and will make an amazing soup.

Serves 3-4


  • 1.2-1.5 kg tomatoes
  • 4 cloves of garlic, diced or micro planed
  • 1 tbsp olive oil
  • 1/2 vegan dry white wine
  • 2 stems of fresh basil
  • Sea salt


Wash and remove any badly damaged bits from tomatoes. Dice or pulse tomatoes in a food processor.

Heat olive oil in a pot and add the garlic, stir until golden, add white wine, tomatoes and stems of basil. Simmer, stirring occasionally for 20-30 minutes until soft.

Remove from heat. Pass though a sieve for a smooth soup or blitz in a food processor for a rustic finish.

Skillet Bread Rolls

Soup served with freshly baked warm bread is always a treat. There are lots options to suit, my soda bread recipe is a hearty no-knead option with no rising time needed. Topped with a plant-based pesto and adding the pull apart rolls are the perfect accompaniments to end of summer tomato soup.

Food allergens that need to be clearly identified on food packaging differ around the world. This tomato soup recipe is free from all animal products, sesame, tree nuts and peanuts. For a gluten free bread option, a pissaladière or leave off the onion topping for a focaccia style loaf.
