Isn’t cracking the caramelised sugar shell of a creme brûlée that most satisfying way to start eating a dessert? Or maybe you look forward to tasting the sweet custard underneath more. Quite possibly it’s the combination of the two, the sensation, sound and texture of the whole dessert. This easy vegan crème brûlée recipe ticks all the boxes … but unlike traditional recipes it is not only simple, it’s also amazingly quick to prepare.
A classic crème brûlée is a thin custard mix, baked in a water bath until just set. This process can be tricky, it takes time and attention. For an easy vegan crème brûlée you simply simmer the ingredients, set in a dish and chill.
Easy Vegan Crème Brûlée
- 1/4 cup cornflour
- 1/4 sugar
- 1/2 – 1 tsp vanilla essence
- 1/2 tsp agar powder
- 1 cup coconut cream
- 1 cup soy milk or milk of choice
In a bowl, whisk coconut cream and cornflour to make smooth paste.
In a small pot, bring soy milk, sugar, vanilla and agar to the boil while stirring. Keep stirring and slowly add the coconut cream paste.
Cook’s Note – This recipe has an advantage over a traditional one, in that like many plant-based or vegan recipes you can taste the raw ingredients as you go. More sweetness or vanilla for your taste, you can add and adjust, or even get creative with spicing.
Pour into dishes or ramekins to set.
To serve, evenly sprinkle with sugar, about a tablespoon and caramelise with Brûlée iron or a cook’s blow torch.
