Looking for a healthy, allergy-friendly snack that’s perfect for lunchboxes, road trips, or hiking fuel? This Crispy Chickpea and Popcorn Trail Mix is gluten-free, dairy-free, nut-free, and completely plant-based. With an oil-free option and endless seasoning variations, it’s a crunchy, budget-friendly snack that works for almost everyone.
I like to test and perfect all of my recipes, but this one is easily among my most taste-tested. Literally hundreds of hungry high school campers and trampers have helped me make sure it’s the best trail mix around – and suitable for nearly everyone.
I first developed this mix as catering manager at the Boyle River Outdoor Education Centre, tucked into the stunning Lewis Pass on State Highway 7 in New Zealand’s South Island. The food there needs to be nourishing, scalable, budget-friendly, and suitable for a wide range of dietary needs. This Crispy Chickpea and Popcorn Trail Mix ticked all those boxes – and quickly became a favourite.
Whether you’re packing snacks for school, hitting the trail, or just want something healthy to crunch on at home, this recipe delivers. It’s simple to make, endlessly adaptable with your favourite spices, and a great way to enjoy whole-food snacking without the allergens.
Crispy Chickpea and Popcorn Trail Mix
It’s easiest to soak the dried chickpeas and seeds (they can be soaked together) overnight, drain and dry before roasting.
Preheat the oven to 150ºC (fan).
Ingredients
- 75g popcorn kernels – popped
- canola oil or savoury plant-based stock for oil free option
- 1 1/2 cups dried chickpeas
- 2 cups pumpkin seeds
- 2 cups sunflower seeds
- Seasoning of choice
Method
Drain and dry the soaked chickpeas, coat in oil or savoury stock and spread out in a single layer on a lined baking tray. On a separate tray do the same to the pumpkin and sunflower seeds.
Roast the chickpeas for 30 minutes then stir, put the seeds into the oven and reset the timer for 15 minutes, stir both trays and roast for another 15 minutes or until the chickpeas and seeds are toasted and crispy. During this time pop the corn kernels – follow packet instructions.
Let the chickpeas and seeds cool completely before combining and seasoning, this helps everything stay crunchy once mixed. Stir the popcorn through, then store in an airtight container once fully cooled.
Seasoning
At the Boyle I often use a classic salt and vinegar seasoning – something most campers already know from their favourite snack mixes. That familiar flavour makes this trail mix instantly appealing, even though it’s a new combination of ingredients for many of them. Of course, the beauty of this recipe is that it’s endlessly adaptable.
Other flavour you might like to try
- Aleppo chilli, sumac and sea salt
- Smoked paprika, ground cumin and coriander
- Lemon zest, dried rosemary and sea salt
- Pickle juice – add to the chickpea soaking water, season with seaweed and lemon zest
This recipe is free-from all common allergens and is naturally gluten free. Food allergens that need to be clearly identified on food packaging differ around the world.
