As the sweet violets begin to carpet the banks where I foraged them last year, I’ve started gathering them again. On our riverside walks, I collect a small bag full each time, savouring the early spring air. For an out-of-season supply, I’ve dried some and frozen others. But a few of the fresh violets? I popped them into a jar and topped it with gin. This is how to make colour changing violet gin.
This idea comes from one of my favourite foraging books—The Forager’s Kitchen by Fiona Bird. Last year, I made my own version of her sweet violet vinegar, and this year, I decided to try my hand at her colour-changing violet gin. The best part? It’s incredibly easy.

The transformation is slow, starting with a pale violet that deepens to dark purple. As the flowers lose their colour, you’re left with an amber-hued gin. To experience the magic, simply pour a measure into a glass, add some tonic, and watch as the colour change once more. The result? A gorgeous pink gin to add a little theatrics to your next cocktail.
Homemade colour changing violet gin
With two ingredients and two steps, it’s really not a recipe as such. No specific amounts needed, more flowers made for a stronger colour.
Side note – while gins are traditionally made from a neutral grain alcohol, some small gin makers use a whey alcohol base which they add their own blend of unique botanicals, which means they aren’t vegan.

How common is it with whey based gin? I am a vegan and ginlover and have never come across this.
I honestly, I don’t know. I only learnt about this as a friend started a small boutique gin label here in NZ that is doing rather well in both hemispheres.
