Evening comes quickly this close to Christmas here in Scotland, some days between starting and finishing work I don’t see daylight; this is a strange thing if you are from central New Zealand. However, there’s no denying, the cold and dark makes it feel like Christmas!
We love the Christmas markets with all the lights, tempting food and warm beverages. Looking at all the festive treats made me think of making eggnog, a drink you only really have once a year.
I’m not normally a rum drinker, but I’ll make an exception for Christmas. This is my egg(less) nog, best enjoyed in good company.
1.5 litres oat milk
180ml golden rum
8 medjool dates, just covered in boiling water, until soft
1/2 tsp vanilla bean paste
1/2 tsp ground cinnamon
Fresh nutmeg or 1/4 tsp nutmeg
1/4 tsp Allspice
Pour just enough boiling water to cover you dates and set aside to soften while you get the rest of your ingredients ready.
I use oat milk, which is unsweetened, other plant-based milks could work, though you might want to adjust the sweetness depending on which one you use.
For a non-alcholic version use a rum essence – just a half teaspoon though.
Add all your ingredients to a pot and gently warm, the spices and flavours will infuse. Pour into a blender and blitz until the mixture is frothy.
Pour into glasses and enjoy while warm.
